Sweet and Savory Galettes

Trendy and tricky enough to interest seasoned pie bakers and easy enough for those too intimidated by pies, galettes will become your new conduit for leftovers, seasonal produce and extra ingredients. In this hands-on class, bakers of all ages will tackle both sweet galettes like spiced apple or cranberry pear and savory galettes, like roasted butternut squash gorgonzola or potato leek. You will learn the basics of preparing and handling galette pastry, and apply this technique to create your own dough with a variety of flours, like spelt, and additional herbs and seasonings. You'll learn how to prepare and arrange decadent galette fillings so that they also look stunning. And we'll make some whipped cream to top the dessert galettes.

This is a hands-on virtual class. Each participant will make their own savory and a sweet galettes.

All ages welcome and encouraged.

Gluten free and vegan friendly.

No special tools, equipment or ingredients needed (see below).

What you need:

  • all purpose flour

  • butter (or vegetable shortening, earth balance or coconut oil)

  • water

  • ice

  • salt

  • vinegar (optional)

  • mixing bowl

  • knife

  • wooden spoon or rubber spatula

  • measuring cups

  • measuring spoons

  • rolling pin (or clean water bottle or wine bottle)

  • any and all savory ingredients you have on hand (leftovers, veggies, oil, condiments, spices, canned goods, cheese, etc.)

  • fresh fruit, sugar, ground spices, lemon
