Mama Parmesana's Eggplant and Chicken Parm

There’s a reason my kids call me Mama Parmesana! Always worth the effort, one of my favorite make ahead meals is Eggplant Parmesan. This class will teach you how to make classic Eggplant and Chicken Parmesan, and will provide low-carb and gluten free variations for both! You choose. You’ll practice tips for properly preparing eggplant and chicken for breading and frying. We’ll whip up a quick flavor-packed marinara sauce from scratch, so you can learn how to stash away eggplant at its summer peak by layering it into a cheesy casserole. Round out the meal with a freshly mixed Caesar Salad, dressed in a tangy lemony dijon vinaigrette salted with anchovies to balance the richness of the Parmesana.

Menu:

  • Eggplant Parmesan and/or Chicken Parmesan

  • Spicy Quick Tomato Basil Marinara Sauce

  • Caesar Salad with Garlicky Croutons

A list of ingredients and materials will be provided at least 2 weeks prior to your scheduled class. You’ll receive a remote joining link once your registration is confirmed.

No Special equipment or tools needed. We will work with what you have!
