Scratchmade Latkes and Apple Sauce

Make perfect latkes and applesauce from scratch. In this class, you'll learn tips to perfectly season your latkes and avoid pesky spatters and oil flare ups. We'll talk about choosing potatoes, apples and oil, but you can use whatever you have on hand. Chef Laura will also introduce you to her "put a little veggie in it" concept so you can fortify your latkes with something green or not. And regardless, they will get gobbled up because they are fried and smothered in homemade applesauce.

Prep: There is no prep required for this class

What you need:

  • potatoes (ideally russet)

  • leeks (or onions)

  • cooking oil (canola, grapeseed, vegetable or olive)

  • kosher salt

  • pepper

  • additional vegetables, like zucchini, broccoli, carrots, or kale, optional

  • apples (any variety, but macintosh are nice)

  • cinnamon sticks or ground cinnamon, optional

  • lemon

  • ginger root, optional

  • sour cream, optional for serving

  • dill or parsley, optional for serving

  • food processor OR box grater OR knife

  • cutting board

  • bowl

  • mesh strainer

  • clean kitchen towels

  • skillet

  • cooling rack or platter

  • paper towels

  • medium pot with lid

  • spatula

  • large spoon
